Update
Nick did not end up skating tonight, due to rules or something, but now word is that he will be skating Saturday night with Pat instead. That will be a cool experience because it's the long track world cup weekend, so for a second Nick can pretend like he is skating in a World Cup. Just getting a taste.

Helpers
Tomorrow evening Nick will be at the rink even though it's his off day. Pat needs to shave about 2 second off his 5,000m time to qualify for the World Cup or something and asked Nick to pace him for 3,000 meters. In order to do this, Nick has to skate 30 second laps for 7 laps. He's never done that before. Nick does really really well when he is helping someone, so I think he will be able to do it.
Speaking of helping, here is Lincoln & Lucy helping my mom eat dinner.

The Weekend
Our weekend was normal - eventful. Saturday morning Nick had time trials. It wasn't an official official one. There was electronic timing, but no volunteers to help with manual timing, arm bands of lap counting. Most of the races were 500s, but there were some thousands, 15s, and 3ks. I got asked by Alex to lap count and it was necessary as one of the skaters kept skating after her race was over. Nick only skated a 3,000, his first. He said that his leg cramped up, and that he was tired, He had a cough all the rest of the day.
On our way home from the rink, we stopped by Old Navy to exchange some jeans and went out for lunch at The Noodle Company or whatever it's called. Not impressed. We got home and had to get ready for Nick's friend, Dallas' reception. It was in Ogden. While there Nick got to see a few people that he hasn't seen in a while. Everyone is married and house buying and kid having.
We left the reception and thought it would be fun to drive by our old house in North Salt Lake and go out to eat in Bountiful. That was weird. It did make me want a house with a yard for a garden and believe it or not, I miss shoveling a driveway.
When we got home we watched one of the best movies ever in the universe, Moneyball. We rented it, but when it is a little cheaper we will buy it. Such a great great show. A Favorite. Top 3... or 1.
Sunday I went to church and was sitting in Sunday school and a member of the bishopric came and said that he wanted to talk to me, right now. I went and he said that they want to give me a new calling. The calling that I currently have is the Sunday school greeter/welcomer. Pretty much I welcome everyone to class and assign prayers. So the new calling is a family history consultant. The ward is reorganizing that area and they are getting a group of people together to teach classes and just help people with their family history.... and because of my talk and excitement, I get the job. I think it'll be fun. It was funny cause it was said that normally family history is done by older people and they want new young blood in there. Ta da!
There is a new family history center that just opened up in Riverton that offers free classes almost everyday for anyone, so I am sure I will be going to some of those.
While I was at church, Nick was at Alex's. They just got a bunch of stuff to fix skis... waxing, sharpening and maintaining. Nick said they had 4 pairs to work on. Around 4:30 Nick got home cause Alex had to go to work and he was all bummed out. I kept asking what was wrong and he would just kinda shrug it off. Finally I asked again... Nick was disappointed because he didn't get to work on his skis and they just worked on Alex's. It made me laugh cause Nick's skis aren't even his skis... they are his friend's that he is borrowing for a while. One day Nick will have his very own skis and a place to work on them.
Oh and it snowed this morning. Not much.

Snow!
Last Saturday we woke up to snow. It is like the second time it has looked like this, this winter season. Nick was stuck training otherwise he would have been playing in it up in the mountains. He did receive text messages from his friends that got to enjoy it though.
Cajun Chicken Bites with Apricot Mustard
5 chicken breasts
Cajun Spice Mix -
2 teaspoons ground cayenne pepper
2 teaspoons ground black pepper
1 teaspoon ground white pepper
2 teaspoons ground thyme
1 tablespoon garlic powder
1 teaspoon salt
Mix spices well and sprinkle on chicken. Let it sit for 30 minutes. In a skillet combine 2 tablespoons of oil and 2 tablespoons of butter. Add chicken and cook till it's done.
Dipping Sauce -
1 1/2 cups apricot preserves
6 tablespoons Dijon style mustard
Combine in small sauce pan and cook till blended. Serve warm.

Chicken & Pasta Primavera
1 can of cream of mushroom soup
1/2 cup milk
3 tablespoons Parmesan cheese
1/4 teaspoon garlic powder
vegetables (fresh or frozen)
2 cups chicken - cubed and cooked
8 ounces pasta - cooked
Heat soup, milk, cheese and garlic in a frying pan for a few minutes. Mix well. Add vegetables and cook till soft, about 10 minutes. Next, add chicken and let cook for a few minutes. Serve mixture over pasta. Sprinkle a little cinnamon and lemon pepper on top for extra flavor.

Weekend One of 2012
Last night was rough. Nick's stomach decided to not like him around 2am; back and forth trips to the bathroom all night and morning. He thinks he ate a bad box of mac & cheese, but I had it too and felt fine. Lots of fluids and bland food will hopefully hold him over till this all passes.
The weekend was good. Nick spent most of it at the rink training and filming for the short track races. I did the usual grocery shopping and lounging. I went to D.I. (the local thrift store) and got a bunch of fun Pyrex and dishes for my dinner photos for like .50 each. Oh, and a cookbook of just chicken for .75. Sunday church was really good. It was testimony meeting and there were so many people there! Someone said that new year's resolutions and 11:00 church makes for a big crowd. The testimonies that were shared were powerful.
I have really been liking lunches such as today's. It's just a bunch of snacks.
