Cajun Chicken Bites with Apricot Mustard


5 chicken breasts

Cajun Spice Mix -
2 teaspoons ground cayenne pepper
2 teaspoons ground black pepper
1 teaspoon ground white pepper
2 teaspoons ground thyme
1 tablespoon garlic powder
1 teaspoon salt

Mix spices well and sprinkle on chicken. Let it sit for 30 minutes. In a skillet combine 2 tablespoons of oil and 2 tablespoons of butter. Add chicken and cook till it's done.

Dipping Sauce -
1 1/2 cups apricot preserves
6 tablespoons Dijon style mustard

Combine in small sauce pan and cook till blended. Serve warm.

Take it to work!
