Nick was off from training today so
we hung out and went into to work around 5. Nice short work day for me.
For dinner I made chicken bits, mac & cheese and broccoli... but
there wasn't enough broccoli for everyone (I cook for some co-workers), so I had an avocado.
It was amazing! Speaking of avocados, they have been priced out really great lately. I like to get about 5 (mostly hard green ones). I will leave
one on the counter and put the rest in the fridge. Within a few days
the green turns a ripe black and gets a little squish and it's perfect.
As needed, I will take another out of the fridge a few days before I want it. I have learned that
they will keep in the fridge for around 2-3 weeks. They are really good
to eat with a little bit of seasoned salt. I learned that in Hawaii.
I found some pint sized freezer bags. I
love them. They are good for freezing chicken for 1-3 people or some fruit. I tried
one pound of hamburger in them, but I don't like how fat they are. I
would rather put a pound of hamburger in a quart sized freezer bag. If
you smush it down flat it stacks nicely.
This is the last weekend before Christmas. I can't believe it's already that time again. I remember last year so well as Nick was living in Ohio recovering from his shoulder surgery. The days were so long back then. I am glad things are the way they are now.
My talk is coming along nicely. There is only one problem, I keep thinking that I should talk about something else. That something else is family history. There is just so much excitement that comes to my mind concerning that topic. Maybe I could find a way to bridge the 2 subjects, or maybe I will just have to prepare 2 different talks and see which one feels more right come Sunday morning.
*Side note, I just did a search for family history conference talks and there are 807 results. Looks like I will have some reading to do.
